At Dume we bring the Piedmontese tradition to the table with an eye on the present. Our dishes are born from produce selected fresh every day: from local Piedmont producers we know by name, to seasonal ingredients that change the menu as the season turns.
You won’t find fusion, you won’t find fads. You’ll find bagna cauda made properly, fresh pasta rolled by hand, and the stuffed potato that has become our signature. Paired with a selection of Piedmontese and Italian wines chosen with the same care we put into the food.

Every dish that reaches your table is the result of work that begins long before the kitchen. Chef Capelli travels across Piedmont in search of producers who share the same idea of quality: breeders, market gardens, dairies, artisan butchers. People who put care into what they do, exactly as we do.
We believe good food must be, above all, honest: recognisable ingredients, techniques that enhance rather than hide, seasonality respected. It’s a simple approach, but it takes daily work and the will never to compromise.

Lovely, beautifully furnished venue, friendly and quick service. The dishes are truly refined and of excellent quality. We really appreciated the list of suppliers at the back of the menu. We also loved the options for vegetarians. A place to return to whenever you pass through Turin!
